Elizabeth "Liz" Palacios

Elizabeth Palacios is a Registered and Licensed Dietitian from Edinburg, Texas. She obtained a Bachelor of Science in Dietetics and Master of Science in Health Sciences with a concentration in nutrition from the University of Texas Rio Grande Valley. She teaches within the UTRGV Bachelor of Nutritional Sciences and is also a student pursuing a culinary arts degree. She has experience providing nutrition education and counseling, foodservice management for long-term care patients, and nutrition-focused grocery store tours. Elizabeth enjoys serving at her church, traveling, and learning new skills. Her favorite food is the Korean dish bibimbap.
